Hearty Vegetarian Stew Recipe
Looking for a warming and nutritious meal that can be enjoyed on chilly evenings? A hearty vegetarian stew is an excellent choice! This recipe is simple to follow yet provides all the flavors and benefits you would expect from a well-rounded, comforting dish. It’s perfect for family gatherings or simply preparing a delicious dinner for yourself.
Ingredients for this vegetarian stew are readily available at most grocery stores, making it easy for you to prepare. The cooking time is approximately 45 minutes, allowing you ample time to relax and enjoy the process of creating this meal from scratch. This recipe serves four people generously; any leftovers can be enjoyed later as a warm snack or lunch.
Ingredients
- 1 large onion, chopped finely
- 4 carrots, sliced thinly
- 3 potatoes, diced into small cubes
- 2 celery stalks, sliced
- 1 red bell pepper, diced into pieces
- 2 cups of canned tomatoes or fresh ones if available
- 2 cloves garlic, minced finely
- 4 cups chicken broth (or vegetable broth for a vegan option)
- 3 tablespoons olive oil
- Salt and black pepper to taste
- Cumin powder, paprika, thyme, and bay leaves (for flavoring)
- Optional: 1 tablespoon of tomato paste
Instructions
Step 1: Begin by preparing all the vegetables. Finely chop the onion, slice the carrots, dice potatoes into cubes, and slice celery thinly.
Step 2: Heat up a large pot over medium heat with olive oil. Add the chopped onions and cook until they turn translucent, approximately 5 minutes.
Step 3: Stir in the finely minced garlic and continue cooking for another couple of minutes to release its aroma without burning it.
Step 4: Add all the sliced carrots, diced potatoes, and celery stalks. Cook them together until they start softening slightly while stirring frequently. This step takes about 10 minutes in total.
Step 5: Next, add the red bell pepper along with a tablespoon of tomato paste (if using). Mix well to combine everything thoroughly before adding canned tomatoes or fresh ones if you prefer fresher taste options.
Step 6: Pour in four cups of chicken broth. For a vegan version, use vegetable broth instead. Stir all the ingredients together until they are evenly distributed throughout the mixture inside your pot.
Step 7: Season with salt and black pepper according to your preference. Add cumin powder, paprika, thyme, and bay leaves for extra flavoring purposes as well.
Step 8: Once everything is mixed properly within the pot, bring it up to a boil. Then reduce heat down to low and let it simmer gently while covered until the vegetables are tender. This should take another 20-30 minutes depending on how cooked you like your veggies.
Step 9: If needed during cooking time, add more water or broth if it seems too thick for your liking. Taste and adjust seasoning as necessary after the stew has been simmering.
Step 10: Serve hot with some fresh bread on the side for dipping into this rich stew!
Tips & Variations
- If you want to add more protein richness, consider adding chickpeas or lentils during the last few minutes of cooking.
- To make it creamier, try incorporating heavy cream towards the end of the cooking process. However, this might not be suitable for those following a dairy-free diet.
- For added texture and extra flavor, sprinkle some fresh parsley or cilantro on top before serving!
This vegetarian stew recipe is both delicious and versatile. Feel free to experiment with different spices based upon your personal taste preferences. Whether you're looking for something hearty during winter months when colder temperatures prevail, or seeking a simple yet satisfying meal option throughout the year, this dish offers excellent value.
