Perfectly Balanced Tomato Basil Soup

Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped finely
- 3 cloves garlic, minced
- 3 medium tomatoes, peeled and diced

- Pinch of black pepper
- Cayenne pepper (optional)
- 1 can (14 oz) of chopped tomatoes
- 1 3/4 cups chicken or vegetable broth
- 1 cup heavy cream (optional for a richer flavor)

- Lemon zest, to garnish (optional)
Instructions
- In a large pot over medium heat, add the olive oil. Once heated, sauté the onions and garlic until they are translucent.
- Add the peeled tomatoes and oregano into the pot with the onions and stir well. Let it simmer for about 15 minutes to allow flavors to meld together.
- Using an immersion blender or transferring half of the mixture into a regular blender, puree the soup until smooth.
- Pour back the blended mixture into the pot along with chicken broth. Bring everything back up to a simmer and cook for another 10 minutes. Taste and add more salt and pepper if needed.
- If you prefer your soup creamier, stir in heavy cream during this stage of cooking. Simmer it again briefly so that the flavors are well combined but do not let it boil as boiling might split the cream.
- To finish off, garnish with fresh basil leaves and a pinch of lemon zest for a delightful touch of freshness (optional).
