For this recipe, you will need the following ingredients: pasta of your choice; olive oil; a finely chopped onion; minced garlic; diced bell pepper and zucchini; halved cherry tomatoes or 40g fresh cherry tomatoes; vegetable stock or water; shredded mozzarella cheese (around 200g); salt and pepper to taste; and fresh basil for garnish if you desire. Instructions
- Preheat your oven: Set it to 425°F (218°C) for the best results. This will help cook the pasta evenly and enhance its flavor.

- Mix everything together: Return the drained pasta to the skillet or pan with the sautéed vegetables. Add reserved cooking liquid if needed for a creamier sauce consistency. Stir in shredded mozzarella cheese and season with salt and pepper. Mix thoroughly until all ingredients are well combined and heated through.
- Bake: Transfer your mixture into an oven-safe dish. If you have a pan that can go directly into the oven, you're good to proceed. Otherwise, transfer it carefully without losing heat or moisture.
