Deliciously Simple Gluten-Free Vegan Lasagna

Ingredients:
- 1 package of gluten-free lasagna noodles
- 2 cans of crushed tomatoes or one jar (about 28oz)
- 1 can of drained and rinsed kidney beans
- 2 cups of spinach, chopped fine
- 1 cup of shredded carrots
- 1/2 cup of nutritional yeast flakes
- 4 cloves garlic, minced finely
- 2 tbsp olive oil
- Salt and pepper to taste (optional)
- 2 tsp dried basil or 2 tbsp fresh basil leaves
- 2 tsp dried oregano or 1 tbsp fresh oregano leaves
- Parmesan cheese, for garnish
Preparation Steps:
Preheat your oven to 375°F (190°C).
Cook the gluten-free lasagna noodles according to package instructions until al dente. Drain and set aside.
In a large mixing bowl, combine the kidney beans, spinach, shredded carrots, nutritional yeast flakes, minced garlic, olive oil, salt (optional), basil or oregano, and pepper (if preferred). Mix everything together to create the filling for your lasagna.
Grease an 8x13-inch baking dish with a bit of oil. Spread half of the crushed tomatoes evenly across the bottom layer of the prepared lasagna dish.
Cover the tomato base with two layers of cooked gluten-free noodles, arranged in a single layer over each noodle sheet. Spoon half of your bean and vegetable mixture on top of one noodle layer to cover it completely.
Repeat steps 3-5 for another layer. For the final layer, add all remaining sauce and cover with the last two sheets of noodles. Cover the entire lasagna dish with a thick layer of crushed tomatoes, pressing down gently so that the noodles are submerged in the sauce.
Cover your prepared dish with aluminum foil and bake it for 45 minutes at 375°F (190°C).
Remove from oven. Allow it to cool slightly, then carefully remove the foil. Sprinkle shredded Parmesan cheese over the top of the lasagna.
Bake uncovered for an additional 20 minutes until the top is golden and bubbly.
