Easy Chicken and Veggie Stir-Fry: A Quick and Healthy Meal

The stir-fry is a popular cooking method that allows you to quickly cook vegetables and protein in a hot pan with minimal oil. This versatile dish can be adjusted according to your taste preferences, making it suitable for almost any diet or preference. Today, we will focus on an easy chicken and veggie stir-fry recipe that's perfect for busy weeknights.

Preparation time: 20 minutes
Cooking time: 15 minutes
Servings: 4

  • Chicken breast - 300 grams
  • Zucchini - 2 medium-sized pieces
  • Carrots - 2 medium-sized pieces
  • Bell peppers - 2 pieces
  • Ginger - a small piece (about 1 inch)
  • Soy sauce - 2 tablespoons
  • Sugar - 1 teaspoon
  • Toasted sesame oil - 1 tablespoon
  • Vegetable broth or water - as needed
  • Garlic - 2 cloves
  • Green onions (for garnish)

Instructions:

Step 1: Prepare the Ingredients.

Cut all vegetables into bite-sized pieces. Peel and finely chop ginger, then add it to a bowl with minced garlic. Set aside.

Step 2: Season the Chicken.

Slice chicken breasts into strips of about 1 inch wide and ½ inch thick. In a small bowl, mix soy sauce, sugar, and toasted sesame oil until smooth. Add in the sliced chicken and stir to coat evenly. Let it marinate for at least 5 minutes.

Step 3: Start Stir-Frying.

In a large wok or skillet on high heat, add about 1 tablespoon of vegetable broth or water. Once hot, pour in the chicken and stir-fry until browned, about 4-6 minutes. Remove cooked chicken from the pan with tongs or spatula and set aside.

Turn down the heat to medium. Add another 1 tablespoon of vegetable oil, if necessary. Add ginger-garlic mixture into the hot pan, cooking for a couple of seconds until fragrant. Next, add all prepared vegetables except green onions; stir-fry them together with the seasoned soy sauce and sesame oil mixture until they are tender-crisp but not overcooked.

Once veggies are soft enough, return chicken back to the pan. Mix everything thoroughly ensuring that each piece of food is evenly coated in sauce. Cook for an additional 2-3 minutes or until heated through. Taste your stir-fry and adjust seasoning if needed before serving.

Garnish & Serve:

Before serving, garnish with finely sliced green onions on top. Enjoy your delicious homemade chicken and vegetable stir-fry!

Tips for Success:

  1. To keep the vegetables from getting soggy during cooking, add them in batches if necessary.
  2. If you're using fresh ginger, ensure it's not too old; otherwise, its flavor won't be as strong or pleasant.
  3. For added protein content and taste variation, consider adding other lean meats such as shrimp or tofu instead of chicken breast.
